Pan fried chicken breasts and roasted broccolini topped with a tomato, caper and olive stew. Cook down 20-30 halved cherry tomatoes for five minutes in a pan with a bit of EVOO and s&p. Add 15 or so pitted kalamatas and 1.5 teaspoons capers, turn heat to high and deglaze with a splash of white wine. Let wine cook off, add some thyme and 1/2 cup stock and pop in the oven for 15 minutes. Halfway through the oven time, chuck in the broccolini (dressed in s&p and EVOO) and let it roast. Meanwhile, cook chicken breast on the stove. Remove everything from the oven, and serve!
