Satisfying lunch: scoop of hummus, avocado, steamed black rice (or other cooked grain), leftover roasted fingerling potatoes, shredded purple cabbage, radishes and pea shoots with a drizzle of tahini dressing, the recipe for which is as follows:

3 tbsp tahini unsalted
3 tbsp any or combination of fresh lemon juice, rice vinegar or apple cider vinegar
2 tbsp water (or more to thin)
1 tbsp extra virgin olive oil
1/2" knob ginger, peeled & grated
1/2 tsp sea salt
Black pepper to taste

Whiz all dressing ingredients in blender until smooth. Pour over and enjoy!
