In my book, the best kale salad ever.
Adapted from the Esalen cookbook.
Make the dressing by blending 1/4 cup lemon juice + 1/4 cup Bragg liquid aminos + 1/4 cup EVOO. Let some red onion, sliced into half-moons, marinade in the dressing while you tear a bunch of lacinato kale into small ribbons. Using your hands, massage the kale into the dressing. Toss some seeds (sunflower, pepitas, sesame etc...), avocado, carrot and radishes or whatever you fancy.
