Potato and Green Bean Salad
Boil baby potatoes, egg. Blanch green beans.
Make dressing with capers, Dijon mustard, vinegar, olive oil.
Toss everything together (adding any other vegetables you happen to have lying around, like the tomatoes here).
Top with cracked pepper.
Great for lunch or dinner when you want to eat healthy-ish but the idea of another green salad makes you want to dive into a pile of cookies.
