Sauté red onions until carmelized, remove onions from the pan and add sliced apples. Sauté for a minute, remove from pan, wipe out the pan and and radicchio leaves dry, just to wilt and get a bit of color.
Take a whole wheat pizza crust and top with the onions. Place radicchio leaves and then the apples. Next, slice some fresh jalapeño and scatter on the pizza with blue cheese and torn tarragon.
Cook in 475 oven for 12-13 minutes
