Fry 1 onion until soft. Add tomatoes. Cook until all water has evaporated from tomatoes. Add 1 teaspoon of curry powder, minced garlic & ginger. Cook for a further 2 minutes. Stir in stock pot. Add 2-3no. 1/3 C of water and 1 Tablespoon of Agave Nectar. Simmer for a few minutes. Add tin of Corned Beef. Let simmer for 5 minutes or so. I ate mine with Soft Fried Eggs, Hard Dough Bread, Broccoli and Bajan Hot Pepper Sauce (Barbados). Enjoy! ?
