clean out your fridge frittata: 6 farm fresh eggs, veggies, hearty greens, cheese of choice, add meat if you fancy.
preheat oven to 350.
beat eggs in a bowl; season with salt and pepper and grated hard cheese [fontina]. add ghee to heated pan and sauté [leeks and green garlic] until translucent. add veggies [like bell pepper]. reduce heat to med-low and pour in egg mixture. let it sit for a couple of minutes and then add soft cheese [goat for me]. garnish with herbs [parsley] and place in oven for 30 mins or fluffy and until golden brown on top.
