Birthday party preparations to celebrate my daughter's 11th birthday . . . Pink Lady Strawberry Cake adapted from #smittenkitchen blog. I use all of Deb's ingredients but make it like a traditional butter cake, creaming butter and sugar together, adding half of lightly beaten egg whites with strawberry purée, then alternating adding dry ingredients with milk. I beat the rest of the egg whites to soft peaks, then fold them into the batter before baking. Cake is frosted with lemon cream cheese frosting, cutting back on sugar. I tried to mimic #funfetti sprinkle decorations on the sides of the cake. Chocolates and jelly bellies provide the finishing touches, just because everything tastes better with chocolate and jellies bellies. This is truly a showstopper of a cake -- at three layers it is over 6 inches tall. But it is a perfect celebratory cake. My daughter requests this every year for her birthday.
