I'm in love with #cauliflower once again ~ this is a Indian spiced cauliflower rice #pilaf with #spring #peas and served drizzled with plain well stirred yogurt
In unrefined coconut oil add #mustardseeds until they pop, then add #cumin seeds, sliced #garlic, sliced Serrano chili, and slivered blanched almonds and cardamom pods ~ stir until garlic is nicely caramelized, then add ginger, chopped cilantro w/stems, #turmeric , peas and pink Himalayan salt, stir cover until peas are 60% cooked add grated cauliflower, stir and cook covered about 10 minutes ~ be careful not to over cook or it will turn to mush... Finish with more cilantro and drizzle with yogurt - enjoy!
