when life gives you the lazies... pantry raid!
seasonal, fresh, white fish fillets + pesto pasta
bring big pot of water to boil and cook the pasta to al dente (rocchetti was all i had?). preheat skillet to med-high heat. rinse fish fillets (sole for me) and pat dry; season with salt and pepper and flour of choice (almond here). sear fish in olive oil. set aside; reduce heat; wipe down skillet. toss drained pasta with the pesto (basil-walnut). (use pasta water if necessary.) plate. garnish with herbs (chives) and squeeze lemon all over. ?? ?.
