This was my first Crock Pot meal! I know. Almost 50. But I'm a late bloomer. ?


2 16oz cans Northern White beans
32oz chicken stock (maybe a little less)
2 skinless boneless chicken breasts
16oz Tomatillo Salsa (or a little more-I love it)
1tsp ground cumin

Put all in Crock Pot.
I put it on high for 4 hours and it was perfect.
You can put it on low for 7-8 hours.

I garnished with cilantro, avocado, shredded Monterey Jack cheese and a little crumbled Feta. I also bet some lime would be great. And perhaps putting chopped Serrano chilies and jalapeño peppers into the CP while cooking.

I loved it! Not a gourmet meal, but easy, healthy and yummy!
