Pasta with yogurt, chick peas and caramelized onions. (Inspired by Diane Kochilas' version. Thank you.) Thicken plain yogurt by stuffing four or five pieces of paper towel into the container and flipping it upside down (lid on). Chop four medium white onions and caramelize them in a large sautée pan. Rinse a can of chick peas. Pick a pasta. Boil and salt a pot of water. Add the pasta. While pasta cooks, add the chick peas to the onions and heat them through. When pasta is cooked to your liking, drain it but reserve some of the cooking water. Mix cooking water and yogurt in a bowl and then mix the pasta into it. Add the onion and chick pea mixture and combine thoroughly. S&P to taste. Lemon zest on top would be delightful but my cupboard was bare.
