Leeks!! Slice leeks in half, clean. Sauté in a little olive oil, cut side down, until browned. Flip to other side, sauté few minutes. Salt. Pepper. Flip back over. Add 1/2 cup white wine and broth to almost cover leeks. Simmer until tender. Flip so cut side up. Sprinkle with lots of Parmesan. Run under broiler until crispy on top. Buon appetite!!
