Grilled bread salad with fresh tomatoes, goat cheese, and thyme.
Slice, and grill a crusty, chewy loaf of bread (I used ciabatta) until it's toasty. Ideally the outside of the bread will toast while the inside remains slightly chewy. Slice a clove of garlic, and a tomato, and rub them on each slice of bread. Tear the bread into pieces, add fresh tomatoes, crumbled goat cheese, and fresh thyme. Drizzle good olive oil, and balsamic vinegar on top.
