I’ve been ignoring my grumbling tummy, as I plow through closing the next issue of City Girl, Country Kitchen. Finally pulled myself away from the desk, and raided the fridge to see what I could scrounge up. This Open Faced Meatball Parmigiana is what I came up with, all made from stuff in the fridge, freezer, and dry pantry. Heated some meatballs in the microwave, fried up country bread in a skillet with olive oil & salt. Smashed meatballs onto the bread, topped with grated Pecorino & shredded fresh mozzarella. Quick turn under the broiler, and voila! Hunger satiated. Now, back to editing…
