This salad is a riot of springtime for assistant editor Caroline Lange, who's also sporting the season's first sunburn. Little boiled new potatoes tossed with ramp pesto, scallions, chives, mint, microgreens, and toasted sunflower seeds. (Last night, there was a soft-boiled egg, too.)
