Healthy-ish nachos! || Preheat oven to 350f. Spread a good layer of organic blue corn tortilla chips on the bottom of a pan or baking sheet, top with shredded cheeses (cheddar and/or Monterey Jack work nicely), pickled jalapeños (canned in Mexican section of supermarket), avocado, cherry tomatoes, chopped scallions and parsley. Bake for 5-10 minutes to melt the cheese. Serve with lime wedges.
