These are "healthy muffins" that always start out with 2 key ingredients: a couple of mashed bananas (overripe) and 2-3 eggs. And then I improvise! This time, I added some granola, cottage cheese, sliced almonds, walnuts, and coconut flakes. The "batter" is ready! Then I put some berries into each muffin hole (a couple of blackberries or blueberries or raspberries or a mix), and scoop the "batter" to put on top of the berries. 15 min in the oven at 350 degrees and - voila! - a wonderful snack or breakfast on-the-go is ready!!!
