Smoked Ricotta Gnocchi - in a bowl, mix together 8 oz smoked ricotta (drained/blotted) with 1 egg yolk, an egg, 1/2 cup grated Parmesan, 1 1/2 tsp salt and freshly ground pepper. Fold in 1 cup potato flakes (the secret!) and a 1/4 cup 00 flour. Mold into a disc, cut into quadrants and roll out each quadrant into 12" cylinders. Cut each cylinder into 8 to 10 gnocchi. Boil in salted water for 3 minutes and drain. Sauté in brown butter and serve how you like!
