First I Grated 1 Red Beet (put it in cheese cloth and rinse until little to no color is dripping out), grate 1 Carrot, and 1 tspn. of Ginger. Then Chop 1 scallion and mix all ingredients together. For the dressing zest 1 Lime, squeeze the juice from 1/2 of lime, add 2 tablespoons of Apple cider vinegar, some Honey, coconut oil and then Salt and Pepper to taste. I didn't measure just mixed enough to make enough dressing for the slaw I grated
