While beets are roasting toss goat cheese in freezer
Roasted beets chopped into cubes - while warm toss in vinaigrette (olive oil, garlic champagne vinegar, Dijon and whole grain mustards)
top mixed greens with warm beets
Cut goat cheese into medallions and coat in egg and dredge in Panko. Fry on non stick skillet until brown and crispy.
