Cauliflower pear soup with Gorgonzola pear crostini
(1) add 1 cauliflower, 1 pear, 1/2 onion, chicken stock in a pan and cook until the cauliflower is tender. Blend everything together
(2) meanwhile cut very thin pieces of pear and a few pieces of rosemary and cook on a grilled pan with a touch of butter.
(3) toast pieces of bread and spread Gorgonzola while still warm. Top with pears and rosemary and a dab of honey.
(4) for soup topping- cut pieces of bread and toss with truffle oil and Parmesan cheese and bake until crunchy. Cook thin pieces of prosciutto until crispy.
Top soup with croutons, crispy prosciutto, goat ricotta and a dap of truffle oil. ??
