Collard Greens for Breakfast ?
I had a big bunch of collard greens just sitting in the fridge and there's no time like the present so we had collard greens for breakfast.
Heat oil and butter in a pot and sauté chopped onions for a few minutes. Add garlic and crushed red pepper flakes and sauté for another minute or two. Toss in the chopped collard greens and cook for another few minutes. Add 3 cups of veggie broth and bring to a simmer before covering and cooking for about 45 minutes until the greens are soft. When the greens are done, splash in balsamic vinegar and add salt and pepper to taste. Top with chopped tomatoes and a small squirt of Sriacha sauce.
Served with a side of scrambled eggs and carrot sticks.
