I experimented with soba noodles yesterday (so important to read the packaging, 100% buckwheat soba noodles are gluten free, but many brands include wheat flour, not gluten free) and made a soba noodle chicken dish with almond butter sauce with sautéed asparagus, Swiss chard, and scallions. The sauce was delightful.
For the sauce, almond butter, ginger, garlic, sesame oil, red pepper flakes, and sesame seeds.
Cook the soba noodles per the package directions, rinse in cold water. Sautée veggies in some olive oil or coconut oil. Pan cook chicken breast with a 1/3 of the sauce. I used bone in, skin on and then removed the skin before shredding so the chicken would stay moist. Toss the chicken, noodles, and veggies together with as much sauce as you like.
