Slice a fresh beetroot in very thin slices. Do the same with half an onion. Then warm some olive oil in a pan and add onion and beetroot. Sweat for a few minutes and than spice with salt and plenty of black pepper. Add a splash of white wine vinegar and a teaspoon of honey and simmer until evaporated.
Let cool for a bit. Meanwhile spread some wholegrain crackers with creamcheese and open a pack of smocked or marinated salmon. Put both beetroot and salmon on the cracker and enjoy!
