Spiced Chickpeas salad ft. Carrots, Tomatoes and Feta!
Toast chickpeas in a non-stick frying pan with cayenne pepper, cumin and ginger. Chop up some carrots and cook separately (steamed is best), add spinach to wilt when the carrots are almost cooked. Halve cherry tomatoes, and cook in pan recently containing the chickpeas. Add it all to a bowl and add small bite of cucumber and lots of feta!
