Creamy avocado salsa
Cumin and garlic spiced lentils and chia seeds
I used leftover roast, chopped and marinated it with terragon vinegar, basalmic vinaigrette and sriracha.
I made the salsa with puréed avocado, chopped onion, tomato, pickled jalapeños and lemon juice.
I cooked 1/2 cup lentils with 1 tsp chia seeds, cumin and garlic.
Not bad at all! Around 500 cals and the lentils (or any beans) are a better carb substitute for taco shells or tortillas.
