Easy one pot meal - start by sautéing a small Vidalia onion, season with salt, pepper, and smoked paprika. Add a clove or two of chopped garlic. Then the juice of half a lemon. Next add in 14 oz of cannellini beans. Simmer for a few minutes; drizzle olive oil if it gets dry. Then add a can of crushed Marzano tomatoes and 1 cup chicken stock. I also like to add ingredients I have lying around, so I put in a few spoonfuls of capers and sliced kalamata olives. Let simmer for 15-30 minutes; season to taste. Finally, with the heat on medium low, add two cod fillets to the pan. Cover and let steam/simmer until the cod falls apart into chunks...roughly 5-10 minutes depending on size. Sprinkle with fresh parsley and crushed red chili flakes. Serve with a baguette!
