Riff on Justin Smilie chicken liver pasta dish.
Dice chix liver. Take ramps or shallots and finely chop. Do same with Italian parsley.
Cook some cavetelli or another twisty pasta til almost al dente. Set aside.
Heat some olive oil in pan. Take chix liver and make a patty. Salt. Let seat til makes a crust on bottom. Add ramps and parsley to the top.
Then scramble stirring slowly. Add sherry vinegar or sherry sherry to deglaze. Keep stirring. Add cooked pasta and some chix broth. Keep stirring til thickens.
Remove from heat.
Put in bowl and eat while hot.
