Butter basted maitake mushrooms in garlic Parmesan nage with chive- pistachio oil.
Roast maitake with 2 Tbsp butter in cast iron at 400. Baste every five minutes for 15. Flip, repeat, Flip then broil for 3-5.

Two cups of water, two heads of garlic, whole shallot cut in half, parm rind. Simmer 30-40. Strain, simmer for 20 till reduced by half.
