Crepes for lunch! Mix 1/2 cup water, 1/2 cup milk, 1 cup flour, pinch of salt, two eggs in the blender at breakfast, and you'll be ready for crepes at lunch! I made mine with garlicky spinach and fresh mozzarella. Paired with a nice salad of diced tomatoes, red pepper, cucumber and topped with dressing of parsley, cilantro, lemon juice, olive oil, allspice, paprika.
