Almost Twin loaves of sourdough. freshly milled red fife and (30%) spelt. sifted out ~20% of bran/germ, which was soaked in boiling water and added back into the darker loaf during second turn of bulk . 85-ish% hydration. 12hr cold proof. soaker-less loaf was super soft and airy but darker twin was super grainy yet surprisingly tender. still working on getting a more open crumb. red fife kinda overpowered the spelt.
