My favourite egg free brownies that are also super easy to veganize!
Bring together 1 cup each of flour and sugar, 1/3 cup cocoa, 1 tsp baking powder & 1/2 tsp salt. To this, add 1/2 cup melted butter (or oil if you're vegan. I had a little less than half cup and ended up adding olive oil to complete the measurement. The flavour was incredible!), 1/2 cup boiling water and a dash of vanilla.
Mix and pour into greased & lined 8x8 square pan. Pop into preheated oven at 180C/375F for 35 minutes.
Let cool & freeze for perfect slices.
