Hardy delicious Lemon Millet Muffins from Heidi Swanson; perfect for breakfast.
- Combine 2 1/4 cups WW flour, 1/3 cup Miller, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt.
- Combine 1 cup yogurt, 2 eggs, 1/2 cup barely melted butter, 1/2cup honey, 2 tbsp fresh lemon juice and zest.
- Combine wet and dry.
- Bake at 400 for 12-15 min.
Eat warm with butter and a cup of coffee! Perfect way to start the day. ?
