10 C warm water + 5 T yeast + 4 T sugar & allow to foam. Add 8 C AP Flour & mix w hand held mixer until smooth. Add 8 T sugar + 3 T salt & mix until smooth. Add 7 T oil & mix until smooth. Add 4 C cracked wheat + 10 C AP flour & mix by hand until no longer sticky & flour is fully incorporated. May need more flour as needed. Cover & allow to rise 45 min - 1 hour. Grease 4 4x12" pans. Shape 4 large loaves. Cover all & allow to rise 45 min. Bake loaves in preheated 400 degrees F oven for 25 minutes. Meanwhile, grease 4 more pans & shape rest of dough. Cover & allow to rise 45 minutes. When 1st batch is done, remove for oven & pans onto cooling racks. Bake 2nd batch for 25 minutes & when done, remove from oven & pans to cooling rack. When completely cool, bag & share.
I came from a big family (8) & my mom always made homemade bread for us. I still make large batches, but always share with friends & neighbors. For my use, I do cut large loaf in half & put in baggies in freezer until needed. Makes great toast to eat with my homemade jelly.
