Cut chorizo into small pieces and fry til nice and crispy. Scoop up and add chunks of stale bread to the pan to fry & soak up oil. Scoop up and reserve. Add one chopped shallot and sauté til soft before adding peas and a splash of water to cook through. Once cooked, add chorizo and bread back to the pan. Serve up with chopped mint, topped with a fried egg! ?
