My go-to, raw pizza sauce. Peeled San Marzano tomatoes, strained from the juice, a glug of good olive oil, and a heavy pinch of sea salt. Blend just long enough to make smooth. Adjust to taste. You can tell when it's just right when you can't put down the tasting spoon.
