Coconut shrimp with mango pineapple sauce over salad greens with radishes. Dredge in cassava flour seasoned with s&p, then egg white, then unsweetened shredded coconut. Bake on a rack @ 400 for 20 mins flipping half way. For sauce blend mango, pineapple, some coconut milk and lime juice with a splash of hot sauce or a jalapeño.
