4-ingredient Baked Chicken Nuggets || I take a pound of ground chicken (mix of dark and white meats) and season it with 1 tsp of kosher salt.
In a separate bowl, mix about 1C of breadcrumbs (I use organic breadcrumbs with no additives) with 1/4C finely grated Parmesan cheese and seasoned with a generous pinch of salt.
With a tablespoon, scoop a slightly heaping amount of ground chicken and drop it right into middle of the breadcrumbs. Cover with breadcrumbs and flatten with your fingertips slightly to press into nugget shape. Bake in preheated 375f oven for about 25 minutes or cooked through.
Nuggets can also be frozen in single layer on sheet pans until firm then tossed into a ziptop bag. Frozen nuggets are cooked straight from the freezer, at 375f for about 27 minutes. Never ever buy store bought nuggets again!
