Soul-warming lentil soup with plenty of greens and aromatics (rosemary + shallots + garlic): Bring a cup of rinsed lentils + half a shallot + cracked black pepper to a boil in a pot of well-salted water and then turn down to simmer until al dente. Meanwhile sauté 2 thinly sliced shallots with one thinly sliced garlic clove and 1 tbsp minced rosemary in a medium soup pot until softened. De-glaze with a splash of white wine and add ~ one cup of diced/puréed tomatoes. Add 1 cup water, then finished lentils with their liquid and simmer for ~ 5 minutes. Add fresh chopped greens and another good splash of white wine and simmer another 5 min. Season to taste with salt and pepper and serve with lemon wedges and a drizzle of olive oil.
