Cube 1-2 sweet potatoes. Fry in olive oil on medium heat for 5-6 minutes until cooked through. Add roasted garlic seasoning, mural of flavor (salt free herb blend), and some salt.
Meanwhile in a small pot, boil water. Carefully lower in two eggs (I put each egg in a small sister to gently lower them). Set a timer for 6 minutes. Remove the pan from heat & drain. Add cold water to the pan & carefully peel each egg.
Place eggs on top of sweet potatoes. Smash each egg with a fork and watch the yolks go! Sprinkle with your best pepper, plus more roasted garlic and salt.
