My favorite and easiest Shrimp Pasta recipe.
Sauté garlic and crushed red pepper in olive oil. Add 10 anchovies and their oil and cook until anchovies have melted. Add capers and cook until golden. Stir in crushed tomatoes, fresh cracked pepper, and a pinch of sugar...reduce heat and cook for about 20-30 minutes to allow the flavors to meld.
Meanwhile, cook pasta. Drain, reserving 1/2 cup pasta water.
When you're about 10 minutes from serving, stir in the shrimp, reserved pasta water, 1 teaspoon Lemon zest and fresh chopped parsley. Cook for about 4-5 minutes on medium heat until shrimps are just about cooked through. Reduce heat to low and add pasta and stir until coated in the sauce and the shrimps are completely cooked through.
Serve with fresh parsley and crusty bread.
