Altered recipe I found on food52 website. Toast orzo in Dutch oven until golden brown and put aside. Season chicken breast with oregano, smoked paprika and s&p. Sear in Dutch oven coated with olive oil, remove from pan. Sauté onion, garlic and mushrooms. Then add tomato paste, halved grape tomatoes, spinach and orzo. Pour in veggie stock to cover. Bring to boil and add chicken back in. Reduce heat and cover for 15-20 min until chicken cooked through and most of liquid is absorbed. Garnish with feta cheese. So delicious!
