Leftover = bowl food. Chop and fry shallots, garlic and portobello mushrooms until soft, add stock, dry porcini mushrooms, shredded leftover chicken, a glug of white wine and (if you have it - it's worth it) a squirt of umami paste. Add drained green/beluga lentils and simmer for a bit. Add any leftover greens - I added peas, kale, spinach, broccoli and asparagus. Season and spoon into bowls with a sprinkling of Parmesan or a dollop of mascarpone (or both)
