Pumpkin and Leek soup:

1.5kg Pumpkin cut into chunks
2 Leeks
1 large onion
4 cloves of garlic
500ml of Vegetable or chicken stock
1.5 litres of tepid water

Sauté onion, garlic and leeks in extra virgin olive oil. When translucent add pumpkin and leave to caramelize for 5-10 minutes. Add the stock into the pot and simmer for 5 minutes on a medium heat. Add water and simmer on medium heat for 30 minutes until pumpkin is soft. With a stick blender blend till smooth. Serve hot with crisp croutons.
