Beef & Broccoli Rice Noodle Salad with Spicy Peanut Dressing.
Another one of those “let’s see what I can scrounge up for lunch” kind of meals. Remembered there was leftover steak in the fridge, found some broccoli florets I’d stashed in the freezer before they could go bad, and had just enough rice noodles in the pantry. Also rescued some coleslaw mix that was begging to be used up.
I eyeballed everything, so it goes something like this…
Add 2 TBS creamy peanut butter, 1 TBS sesame oil, 2 TBS olive oil, 1 tsp soy sauce, 1 tsp Dijon mustard, 1/2 tsp honey, 1 1/2 tsp apple cider vinegar, juice of 1/2 lime. Whisk it up, and season with salt & chili flakes.
Mix the dressing with cooked rice noodles (let’s say 1 ½ cups), shredded leftover steak (4 to 5 slices), steamed broccoli (as much as you like or have), handful of coleslaw mix, and fresh chopped cilantro.
