Roast salmon with some EVOO, salt, and pepper. Boil udon noodles. Sauté scallions in neutral oil. Add garlic and ginger. Add shiitakes and asparagus with soy sauce, rice vinegar, sesame oil and a touch of sugar. Top noodles with salmon and veggies.
