Pulled chicken lettuce cups and quinoa salad:
Marinate chicken with Herdez salsa in bag overnight. When ready to cook take out of bag and season with s&p and chili powder. Bake 400 degrees 20 minutes. Let rest and shred chicken. Toss with more salsa, cumin and chili powder. Eat with lettuce cups or tortillas and garish with guacamole!
Toss quinoa, garlic, black beans, corn, diced red pepper, diced red onion and diced jalapeño in a bowl. Dress with balsamic vinegar, olive oil, s&p, cumin and chili powder. Tastes better the next day!
