Clean out your veggie drawer and make soup! Sauté veggies. Add a can of San Marzano plum tomatoes and vegetable broth. Simmer 45 min or until veggies are done. Add a cup of uncooked pasta and season to taste. Finish with a drizzle of aged balsamic and some shaved Parmesan. Enjoy with some artisan sourdough.
