Quick pasta/pizza sauce!
-A couple of TBSPs of olive oil or butter
-1 can of diced tomatoes
-A few cloves of garlic, roughly chopped
-Part of an onion, diced (I had some leftover in the fridge from earlier this week)
-A palmful of spices like oregano, thyme, or whatever your preference. I used a "pasta sprinkle" mix
-About 1 TBSP tomato paste (I have a handy squeeze tube from Whole Foods!)
-Salt and pepper to taste
Sauté the onion and garlic for a few minutes, until translucent/soft. Add the can of diced tomatoes (including the liquid), tomato paste, spices, S+P, and cook over low heat for about 15 minutes, stirring a bit as you go.
At this point, you could leave it chunky, purée it, or do like I did and mash down the tomato chunks a bit with a silicon spatula (I'm lazy). Soooo good on homemade pizza dough with fresh mozz!
